Does anyone have a great recipe for vegetarian chili that does not require tofu?

This is a GOOD one! It was served at an event in my State at the State Capitol and was VERY popular!
I got the recipe from my sister.
You can also serve it with tortilla chips like a "nachos" type dip. Enjoy!

Vegetarian Chili Recipe

2 tbs. vegetable oil
1 large Maui onion, chopped
4 large cloves of garlic, minced
1 medium-size sweet red pepper, diced
1 medium-size sweet yellow pepper, diced
1 medium-size sweet orange pepper, diced
1 medium-size green pepper, diced
8 oz. mushrooms, chopped
3 tbs. chili powder
1/2 tbs. ground cumin
1/2 tsp. red pepper flakes
1/4 tsp. salt
1 can stewed tomatoes
1 can corn kernels, drained and 2 ears of corn
1 can kidney beans, rinsed and drained
1 c. water or 1 c. chicken stock
1/2 tbs. dried oregano
1 medium-size zucchini, diced
4 stocks celery
cilantro, chopped (optional)

1. Heat oil in deep pot over medium heat.
2. Add onion, garlic, and peppers. Saute for 5 min. to soften vegetables.
3. Add zucchini, corn, mushrooms, and celery. Cook, stiring until soft and vegetables give off liquid and start to brown around edges (about 6 min.)
4. Add chili powder, salt, and cumin. Cook, stirring until fragrant (about 30 sec.).
5. Add kidney beans and stir well.
6. Add stewed tomatoes and water/chicken stock. Stir well and bring to a boil.
7. Reduce heat to medium-low and simmer, stirring occasionaly (about 20 min.).
8. Remove from heat and stir in cilantro.
All done and ready to serve!

I make a real simple black bean chilli. If you like it a little soupier, you can add some vegetable broth. Put a little water in a saucepan with a Tb. of soy sauce, a slice of chopped onion, and a clove of chopped garlic. Cook until the onion is soft. Then add: one can of black beans (not drained), a small can of corn, a can of chopped, flavored tomatoes (like Italian style), 2-oz of diced mild chillies, oregano or Italian seasoning to taste, and about a ts. of cumin (really makes the flavor). Then you just simmer for about 25 minutes and it's done. This makes about 3-4 servings, and it's great with crusty bread. Enjoy!

Hope you enjoy this delicious Vegetarian Crockpot Chili!

Ingredients

1 (11 ounce) can condensed black bean soup
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 (16 ounce) can vegetarian baked beans
1 (14.5 ounce) can chopped tomatoes in puree
1 (15 ounce) can whole kernel corn, drained
1 onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 Tbs chili powder
1 Tbs dried parsley
1 Tbs dried oregano
1 Tbs dried basil

Directions

In a crockpot, combine black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper and celery.
Season with garlic, chili powder, parsley, oregano and basil.
Cook 4 hours on high or 8 hours on low

I don't have a recipe but wanted to say that I have had chili served to me where eggs were used instead of tofu and it was delicious. The eggs were cooked like you would an omlet and then chopped apart in bite size pieces. I would have to guess they were pre-cooked and added last?

Easiest (and best) recipe ever:
? cans of various beans (the more types, the better)
1 can of mexican style stewed tomatoes
1 jar salsa
1 can tomato sauce (small for less beans, large for more)
package of chili mix.
(any type meat can be added too)

Drain the beans (I partially drain chili beans that are canned in seasonings). Put everything in the crock pot on low and let simmer 6-10 hrs.

I have made this recipe many times. My husband didn't even know it was vegetarian!

1 Lg. onion, finely chopped
1 Green pepper, seeded & finely chopped
6 cups canned stewed tomatoes
2 cups canned pinto beans, drained and rinsed
2 cups canned kidney beans, drained and rinsed
1/8 tsp ground cloves
Dash allspice
2 Tbsp chili powder
1 Tbsp cumin

Saute onion and green pepper in a dutch oven coated with nonfat cooking spray. Add remaining ingredients and simmer until flavors are blended. (about 20 to 30 minutes) Serve

Hi there!
I make an excellent vegie chili using Morning Star brand meat crumbles. Target has them as well as Albertson's. I fry one package in a small amount of olive oil with one chopped onion until slighly browned then I add 2 chopped tomatoes, a few garlic cloves, 1 zucchini grated, yellow, red, and/or orange peppers chopped, chili seasoning packet, 1/2 teaspoon sugar, kidney & pinto beans (you can also add chick peas). Add water, cover and simmer for about an hour. Taste and season with salt and pepper if needed.

I just use bell peppers, onions, kidney beans, and crushed tomatos then add seasonings. It makes a yummy fresh chili. If you like the "beef" crumbles you can add them, but I usually don't.

this is easy and really tasty. you get a lot of protein from all the beans and you can add extra veggies to add color and texture (and flavor).

you'll need a large onion, mushrooms, carrots, celery, one big can of kidney beans, a can of garbanzo beans, can of black beans, 2 large cans of crushed tomatoes, bell peppers (pref. one of each color), corn (either fresh or frozen), cilantro, cumin, oregano and chili powder, cayenne pepper (if you like it hot)and salt and pepper. also, cheese, sour cream for garnish.

sautee a chopped onion in olive oil, add a bunch of sliced mushrooms, carrots and celery and some diced or torn up bell pepper (i like to use one of every color) until they soften. then add crushed tomatoes, beans, corn and seasonings. i just keep tasting until i find the right flavor combo. let it simmer for a while -- 1/2 hour or so. then serve with grated cheese, cilantro and sour cream.

Hi C.,

I use pinto beans instead of red beans
half onion cut up
3 garlic cloves cut up
Pace Pacanta Sauce
Chili powder

Cook the beans with the season and once they are done add about 1 1/2 cup of pace pacante sauce and cook for 10 more mintues

I have been a vegan for almost a year and a half. I don't usually eat anything in a package or a can, but I have found this great packaged seasoning for Vegetarian Chili at Henry's. It is "Simply Organic" Vegetarian Chili seasoning. You just add your vegetables and it tastes great.
There are also many, many websites that you can access by simply googling "vegetarian Chili".

And all you need is spices, black beans, corn, and anything else you'd like in there I love artichoke hearts in mine and tomatoes. (I use the caned diced kind) onion & bell pepers, I love those orange and yellow ones.

The one from the State Capitol looks yummy but here's another one and even faster. If you have a crock pot (slow cooker) then you can just dump it all in OR you can just cook it all in a big ol' stock pot. I get rave reviews on my chili and even meat eaters can't believe how yummy it is.

1 onion (diced & sauteed first)
1 can pinto beans
1 can black beans
1 can white or red kidney beans
1 can garbanzo beans
1 large can diced tomatoes
1 can white "shoepeg" corn
1 can baby petite peas
1 fresh zuccini (diced)
1/2 head of cauliflower (small pieces)
2-3 TBSP of olive oil (or more to taste)
1 TBSP Cumin
1/4 tsp. cayenne pepper (more or less depending on how hot you like it)
1/2 TBSP Chili Powder
Salt and Pepper to taste
*optional: 1/4-1/2 a beer (though chili will be a bit more liquid but the flavor is good)
Cook about an hour or so, until nice and hot and flavorful!

We top this with fresh avocado and tortilla chips. And, it keeps getting yummier the next day or two. You can mix it up too. Sometimes I add sliced carrots (steam first), sometimes different peppers, sometimes I omit a can of beans and add lentils, and usually I make this ALL organic except I can never find white shoepeg corn in the organic version. Have fun with it, you can't screw it up! Even delicious cold with chips.

Insanely Easy Vegetarian Chili

Ingredients
1 tablespoon vegetable oil
1 cup chopped onions
3/4 cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
3/4 cup chopped celery
1 tablespoon chili powder
1 1/2 cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil

Cooking Instructions
Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.

Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.
