I am looking for a bunch of recipes such as a cookbook as I have recently decided to go vegetarian possibly vegan with my 1yr old as well as myself. I am sure it is going to be a difficult transition more so for me so I want to get some feedback from you all on what you have tried rather than buy a million cookbooks and be unsatisfied. Thank you

hi V., great post! we all should be thinking of greener, healthier ways to nourish our bodies and especially our children's bodies. awesome suggestions amy, there really are many options available for vegetarians if you just look in the right places and ask the right people, you are an inspiration and teaching by example. now i have to disagree with aaron, the rule is always: mommy knows best. and every doctor will support that rule especially when a parent is so responsible and conscious enough to explore the healthiest possible lifestyle for their kids despite the "norm". you are doing a wonderful thing by making your child's health and the environment your number one priority, rock on V.!

Hey V.! How have you been??? As you know, Star and I are vegetarians. I can't say that I have a particular cook book that I run to, but it really is so easy. We eat a lot of mexican meals...like black bean quesidillas, enchiladas, tacos with soy crumbles, etc. We also do a lot of pasta. I imagine you have used faux meat in your cooking already, but for suggestion, we love boca crumbles for our ground "beef", and the BEST "chicken" is from Quorn ( available in Whole Foods, and even some Publix stores). I think it really tastes like chicken, and they make a whole breast. They do have breaded varieties, but I love just the plain, non-breaded breast. You can substitute it in any chicken recipe. Something else that we all love, when we want an easy dinner, are the morning star farms "hot dogs". I saute them until they are thawed, and a little golden, then cut them up, put them back in the pan and saute vegetarian baked beans with them. It's not gourmet...but Star loves it. I just bought, but have not read, a book called Quantum Wellness by Kathy Freston. It got a lot of attention when Oprah did the 21 day vegan cleanse. I read about it in a few magazines, and thought it looked interesting. The author is Vegan, and it talks about why that is such a healthy choice, on many levels, and then she includes a bunch of recipes. The recipes look good, I will let you know how that goes. I don't want to go totally vegan, but I would like to take a step closer in that direction. Good luck!

In response to the parent who does not think that a vegan diet can offer proper nutrition...that is absolutely not true. A diet filled with whole grains, fresh produce, soy meat substitutes, tofu and rice milk is extremely healthy. You should definitely speak with your doctor before putting a 1-year-old on any sort of unusual diet. It will be very difficult to provide proper nutrition for a child that young with a vegan diet (not that you shouldn't change your own diet if you want to).

EDIT: Just to clarify, I don't think there's anything wrong with vegetarian or vegan diets. My resonse is simply based on the fact that very young children have different nutritional needs. When it comes to children's health issues like diet, I would always recommend talking to your doctor first (and if you don't trust what your doctor says then you should find a new doctor).

I love the Moosewood Cookbooks. I use both the classic version and the new. Excellent, nutritious, many easy recipes.

I am also interested in recipes (thank you Amy C for some ideas) but sometimes get overwhelmed by cookbooks. Lets start a recipe exchange of things we find that are good. I have tried Morningstar Brand and it is good. Also some frozen meals from the healthfood store.
