Best Way to Cook Fish!

I've not been a fish eater, but want to try fish because I know it's healthy. I also have a nine year old son, who I'd like to see eat healthier. So, I thought I'd start with adding fish to our diet! Could any of you give me your advice on the best type of fish to choose and how to cook it? I appreciate any advice you can give me. Thank You!

So What Happened?

Thanks to all of you moms who replied! I have a lot of information now and plan to try cooking talapia first! Wish me luck! Again, I really appreciate everyone's help.

We usually do Salmon or Halibut. I buy it at whole foods; occasionally they'll have it already seasoned on sale. I usually wrap it up in tin foil wit some olive oil on the bottom, sprinkled with some dill and lemon grass seasoning; tony chashreys (sorry, dont know the spelling, but we live on this stuff!!); we love lemon, so i usually squeaze lemon juice on it and put the lemon in the tin fiol. Grill it for about 45 min at 350.

Here's a great tilapia recipe all three of my kids (9, 6 and 1) love:

Brush tilapia fillets with olive oil
Sprinkle with creole seasoning
roll in crushed french fried onions (a large can will cover 4-6 fillets)
Bake a 350 for 18 minutes.

I like the salmon fillets (not the steaks) - season it with a touch of salt and maybe some Mrs Dash or something similiar and grill - spray the grill or pan with P. cooking spray for less calories and fat intake.

Another option is to buy a wonderful book that goes along with the alli diet program - the book is sold separate and has tons of recipes that my three yr old daughter loves... It helps me eat well and it teaches her a healthier way of eating as well. they say if they grow up eating right it keeps them healthier in the long terms of life.

Pampered Chef has an amazing Grilled Tiliapia recipe that we eat once a week almost!

Grilled Tiliapia with Pineapple Salsa

Pineapple Salsa
1/2 pineapple
1/4 small red onion
1 serrano pepper
2 tbsp. chopped fresh cilantro
1/8 tsp. salt
1 lime

Tilapia
1 packet taco seasoning mix
3 tbsp. olive oil
4 boneless, skinless tilapia fillets

Heat grill pan over medium-high heat 5 minutes, As pan heats, arrange pineapple strips in a single layer over grill pan and cooke 2-3 minutes on each side. Set aside on cutting board.

While pineapple cooks, chop onion. Cut serrano pepper and cilantro. Combine onion, serrano pepper, cilantro and salt in a small bowl. Zest lime to measure 1 tsp. zest and juice lime to measure 1 tbsp juice.

Whisk taco mix and oil in a bowl. Add tilapia; turn to coat. Place fillets onto grill pan. Cook 2-3 minutes until tiapia flakes easily with a fork.

Chop pineapple and add to onion mixture in bowl; mix well. To serve, top tilapia with pineapple salsa.

YUMMY!!! My kids love it!! Sometimes I leave out the pepper. Good luck!

I like to cook salmon. Here's how I do it.

I cover the bottom of a pan with foil enough to wrap the fish for cooking. I then cut up an onion in large sections (about 1/3rd of an onion) put it in the bottom of the pan. I take my salmon and sprinkle it on both sides with Old Bay Seasoning, it's in the spice asile. I place it on top of the onion, put a small pat of butter on top of the salmon, then close the foil all sides, cook it on 350 for about 30 minutes. It's wonderful. Good luck.

We buy Tilipia. I have a great non-stick skillet. I season with Cavendars greek seasoning and pay "fry" it without oil. When it is almost done, I put just a little of the Lawry's Sesame Ginger Marinade. My husband loves it everytime.

So far, you've gotten a lot of really great responses. Salmon, talapia, and tuna are popular in my house.

another good source, is the meat department at the grocery store. Look at the displays near the fish and you can usually find recipe cards. Also ask the guy behind the counter if he has any seasonings. I got a salmon seasoning once that was really good. But, he didn't tell me to use it sparingly. If it looks like it has a lot of salt, go light!

Mrs. Dash, Montreal seasoning mix, and other herb mixes in the spice aisle are great to just sprinkle on and either bake or pan fry.

Hi!

I think a really great fish is Salmon. There are many ways to cook it but, my favorite is by Ina Gardner the Barefoot Contessa from Food Network, she calls it Asian Grilled Salmon, but it is soooo easy and good!! Here is the link to the recipe....

I'll have to get back with you on my salmon patties--yum. But until then, I'll tell you how I cook my tilapia and flounder. I pan fry them. I put a little olive oil in a teflon skillet. When the oil is medium hot, I place the fish in the skillet and add salt and pepper to taste. Occasionally I'll add another spice such as lemon 'n pepper spice. I turn it once when it turns white on bottom. Then when its white and flaky all through (about 15 minutes total), its done. Easy and tasty!

Hi P., i usually go to HEB and buy some that are seasoned already, then all I do is just pan fry it or bake it. My family loves the lemon pepper one.

Sounds like you got some great ideas for fish. I make Tilapia, Cod, or Salmon most of the time. My 5 yr old loves it. For Tilapia or Cod, I usually do butter, garlic cloves, pepper in a baking dish and bake until fish flakes. Sometimes do lemon pepper as well. For Salmon, I dash with worchestire sauce or teriyaki sauce, and sprinkle with salt, pepper, & rosemary. Usually do my salmon on the grill or my george foreman grill. Salmon does well on the george foreman.

I LOVE this Tilapia recipe... and my kids and husband eat it too!!

INGREDIENTS

* 1/2 cup Parmesan cheese
* 1/4 cup butter, softened
* 3 tablespoons mayonnaise
* 2 tablespoons fresh lemon juice
* 1/4 teaspoon dried basil
* 1/4 teaspoon ground black pepper
* 1/8 teaspoon onion powder
* 1/8 teaspoon celery salt
* 2 pounds tilapia fillets

DIRECTIONS

1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

P. have for years used a lot of the techniques and recipes mentioned for fish and they're wonderful. I will add, that I like high heat and short roast times for cooking my fish. I try to adhere to the 10 min. rule for every inch. I usually end up with a fish that is seared on the outside and moist on the inside. For lower temps., I use a cedar plank in the oven and love that cooking style.

In the last 8 years since marrying an Italian and becoming friends with a group of West Indians at church, my fish uses have changed considerably. West Indian stew fish with tomatoes and aromatic veggies and serve with rice, my little guys love it. They also use salted cod to make fritters which once learned, though a bit labor intensive are great snacks and appetizer, they freeze well and warm up in the oven with excellent results.

My mother-in-law has shown me how to incorporate fish into a lot of traditional dishes.
Pasta Sauce: Add one or two raw cod filets to your favorite jar or homemade sauce, cook till meat starts to fall apart and break-up and serve over pasta. You can also add canned tuna to sauce and other raw seafood, just don't overcook. I've used sauce to make a quick lasagna, Italian do not mix cheese and seafood, so I use roasted veggies in alternate layers.

Quick bean soups: 2 cans of cannelloni beans or any white beans rinsed, sautéed aromatic veggies, 3 to 4 cups of veggie or chicken broth, blend with hand blender once heated add left-over fish in small chunks at the end.

Frittata: At the end of each week I take all my left over veggies (onions, carrots, peppers, potatoes, parsnips, turnips, rutabaga, etc., cut to uniform size toss with olive oil, herbs, salt and pepper) and roast 30 min. or less in 400 degrees oven. I usually serve with salmon that I put in the oven and roast for 20 to 15 mins of veggie cook time. Next morning I add left over oven roasted veggies and fish, to 6 eggs whipped with 1/2 c of half and half, salt and pepper in large skillet. I usually finish my frittatas off in a 400 degree oven for 10 minutes. Just enough time to make toast or english muffins.

Stove Top Skillet Dish: Dice eggplant, squash, or potatoes and sauté in olive oil with onions, garlic and pepper till all ingredients are tender. For potatoes you can add a little water and cover to steam tender. Add a can of dice tomatoes with juice (15 oz), add a dash of sugar, salt, pepper and herbs (oregano, thyme or basil) to taste. Add 2 small fillets cut into chunks, I use tilapia, perch, trout or cod and cook covered for about 10 minutes more at a slow simmer.

I would broil a light tasting fish if you are not too familiar with how to prepare it. Before I became a mother, I was a General Manager of a seafood restaurant for 18 years. I know "just a little" about fish!!! (sarcasm)
You might want to stay away from tuna steaks because contrary to popular belief, they are not an easy fish to cook. MOST people overcook it.
Also, if you are not accustomed to fish, salmon, mat be a little "fishy" as it is a very oily fish.
Talapia is pretty decent. Place it in a flat pan, with lots of non-stick cooking spray and add whatever spices you want. But whatever you do, DONT OVERSPICE!!! Again, many people tend to do this. Whats the point of eating fish if all you can taste is lemon pepper?

When I was younger my family had a fish fry every weekend. It was mostly catfish, of course everything was deep fried. We had catfish, hushpuppies, slaw, pickles and fries. I know it was not the healthiest but it was tasty.

I have fried catfish nuggests at home for my family and they went over ok.

Most of the time, I cook salmon if I cook any type of seafood. I am not a fan of salmon but I cook it because hubby and daughter like it. We like a recipe from Everyday Italian cookbook. You put a piece of salmon on a piece of foil. In separate bowl mix 1 can diced tomatoes (drained), 2 shallots (chopped), garlic to taste and about 2 tsp of olive oil. Spread tomato mixture on top of salmon. Wrap in pouch and bake. You can make this ahead of time as well. As for the recipe, I went off the top of my head because I usually look at a recipe and then add/delete items to our taste. We like a lot of garlic and oniion flavor on this one. The flavors blend really well with the salmon and it is the only way I eat salmon.

I was is the same boat. I just do Morey's Alaskan Salmon and it's at Costco. It's already marinated and the directions give you a couple of ways to cook it. I like the bake option (400 for 15-20 minutes). Six come in a pack for about 12 bucks. We call it chicken for our 3 year old and she loves it. This with brown rice and edenames, we love it.

I have an 8 and a 1 year old boys and they can't get enough of this simple salmon recipe:

Place a baking rack or something like that on a cookie sheet (I use a grilling pan with little holes and place it upside down) and pour some water in the cookie sheet.

Plop the salmon on the rack and poke a bunch of holes in it with a fork.

In a small bowl mix 1/4 teriyaki sauce, 1/4 soy sauce, 2 tbs brown sugar, and 2 tbs Tony Chacere's (makes it a little spicy so substitute something else if you'd like). Pour that over the fish.

Broil for about 8 - 10 minutes. The time REALLY depends on the thickness of the fish so the timing may vary significantly. You'll know it's done when the fish flakes instead of sticks together.

This is my 1 year old's favorite food in the world and my 8 year old gobbles it down too. I usually serve this with steamed broccoli (sp?) and rice of some kind.

I have done this on tilapia and trout. Everyone loves it and it's healthy.
Put a small amount of olive oil in your pan to coat the bottom. Get navel oranges (1 for 2 or 3 pieces of fish) and slice them thinly, minus 1/2 orange. Place the fish in the hot pan and sprinkle a little salt, curry, and ginger on them. Squeeze the 1/2 orange over the fish and then top with the slices. Cover and cook until done. (You can also use parsley for color/garnish with this)

We love fish, and it depends on what you like.
Do you grill? If so, tuna or chilean sea bass... with a little salt/pepper, basted lightly with olive oil.
Tilapia is good with sauteed onions and lemon/garlic
You can also lightly batter white fish (whatever kind) dipping in egg then in very smushed up potato chips... this sounds silly, but it is good and kids LOVE it. Then just fry it in a light olive oil for a couple minutes each side.
Type in "easy fish recipes" online... you'll get more than you can dream of.

I like all of the recipes you've gotten, they are similiar to mine. I like to serve my fish on a bed of steamed rice. My kids love white rice so they have to have a bite of fish with every bite of rice. Good luck.

What kind of fish is it? I do a salmon stuffed w/ herb goat cheese and topped w/ dijonaise and sprinkle with salt and pepper. It is that easy. But some people don't like goat cheese. Go to foodnetwork.com and put your type of fish in the search engine. That is what I do and 9 times out of 10 it really helps me out. Good Luck!!

I like to bake my fish in the oven. I have always been so scared of fish being raw in the middle so I cook it very slowly!! I put it in a baking dish with olive oil, butter, garlic powder, (any spices you want) and just start out on about 300 in the oven. After it seems to be cooked pretty good in the middle, I turn the oven up to about 400 to brown it. I squeeze fresh lemon on it and sometimes even cook the lemons on top of the fish. THis works with pretty much any type of fish, just see what looks good at the store, and just remember to cook thoroughly! GOod Luck!

Our favorites are salmon and talapia. I line a pan with foil, spray with non stick cooking spray. I season most all fish with fresh lemon, salt and pepper. I also add dill to salmon. Bake at 350 degrees until fish flakes. When it flakes it is done. It usually only takes a few minutes (15-20) to get it done. I also like to add a very small amount of butter to the top of it when I pull it out of the oven. This works for flounder, red fish, most any type of fish you can buy or catch. I also use my George Forman Grill for fish. It is great that way too. Good luck. We cook fish 2 times a week -my family loves it.
